Cauliflower & Wild Rice Soup

Ingredients
1 medium onion, chopped
1 c. thinly sliced celery
1 c. sliced fresh mushrooms
1/2 c. butter or margarine
1/2 c. whole wheat flour
1 qt. chicken or vegetable broth
2 c. cooked wild rice (see recipe below)
2 c. cauliflower florets, cooked
1 c. light cream
Directions:
In a large saucepan, saute onion, celery, mushrooms and butter until tender. Sprinkle with flour. Stir to coat well. Gradually add broth. Cook and stir until thickened. Stir in wild rice, cauliflower and cream until well blended. Cook gently until heated through. Do not boil.
Wild Rice

Ingredients:
1/2 c. wild rice
1 c. water
sea salt or other seasonings like any of the following: onion, garlic powder, parsley, white pepper, basil, oregano, sage, cayenne pepper, lemon peel, savory, bell peppers, tomato, mushroom, spinach
Directions:
Bring water to a boil. Toss in wild rice with seasonings. Cover, turn heat down to low and simmer for at least 30 minutes.
*Do not take the cover off or stir - just set the timer and walk away :)
Yields 2 cups cooked wild rice
